Elaboration:

Grapes harvested very early, in the last days of July, to achieve a potential alcohol of not more than 10% vol. and a very marked acidity, the first harvest of all Europe. Second fermentation in the bottle is achieved by the champenoise method. .

Maturing and ageing:

Ageing in the bottle for 36 months.

Analytical characteristics:

12% vol.

Organoleptic characteristics:

Roundness without losing freshness because its 30 months ageing and a good acidity. Bright straw yellow color, typical of wines ageing on lees; notes of green apple, tasty, delicate, good persistence and volume in the mouth.

How to serve:

Serve between 6 and 8º C.

El Lagar del Zar

Elaboration:

All the grapes are cultivated in vineyards located at a height over 700 meters in Finca La Indiana (Ronda), where day and night temperature variations allow for the perfect maturation of the grape; but Rome that is grown in Montes de Málaga area, at 900 meters. The hand-picked grapes are brought to the winery in crates of 20 kg each after they have been laid in the “paseros” for drying them in order to get more residual sugar.

Analytical characteristics:

13 % vol.

Organoleptic characteristics:

Cherry color, clean and brilliant. In the nose, flowers reminding, licorice. The mouth is powerful, creamy wine and unctuous with a long-lasting aftertaste.

Serve between 9 and 11º C.

Ventura 27

Elaboration:

Moscatel de Alejandría comes from the steep slopes of the Axarquía and Pedro Ximén comes from Montes de Málaga. Decomposing slate is the type of soil in these two areas, where the plants grow and the grapes mature to get an extraordinary quality fruit. This craft vermouth is made using traditional methods, with selected grapes and the best botanical herbs and spices. Mixed according to the original formula and slow maceration in our winery, located in the region of the Axarquía, to achieve balance and elegance necessary before releasing them for your enjoyment.

Maturing and ageing:

12 months in centennial american oak barrels. These barrels nested inside for many decades the best holandas with which a magnificent brandy was produced.

Analytical characteristics:

15 % vol.

Organoleptic characteristics:

Iodine notes with amber background, bright and brilliant. Spicy aromas, cinnamon and orange peel. In the mouth, bitter-sweet adds freshness and amenity.

Vermut Dimobe

Elaboration:

Moscatel de Alejandría comes from the steep slopes of the Axarquía and Pedro Ximén comes from Montes de Málaga area. Decomposing slate is the type of soil in these two areas, where the plants grow and the grapes mature to get an extraordinary quality fruit. Made of a selection of the best wines of the varieties Pedro Ximén and Moscatel obtained in our cellar, with aromatic herbs chosen and macerated, with which we’ll get a wine very appreciated as toning up and restorative.
